Let there be light! And television! And Internet! And good food! I love electricity!
If you haven’t already heard, we are back on the grid!!! The good news came on Saturday at around 1:30PM – almost 6 whole days after the power went out. The power company trucks flooded our neighborhood around 9AM Saturday morning and the munchkin and I stood outside and did a little dance for them. They were all very nice and it was so great of them to come from all around the country to help restore our power! The guys who hooked up our power were from West Virginia, but I saw trucks from other parts of Ohio, Virginia, and even Canada all helping out this week. Woo hoo!
I didn’t get back to cooking right away because we had no groceries. We took care of that problem Sunday morning when we went on a shopping spree at Trader Joe’s and then went to my Mom’s house to pick up the food we had dropped off there earlier in the week.
We came home and I set to work unloading the bags – it was like Christmas! I got to put everything away in a clean and empty fridge. Here are the pictures of our newly-stocked fridge and freezer:
So clean and orderly! I love it. There are some non-vegan items visible, but I don’t eat those. And those little Trader Joe’s yogurts visible in the top photo??? They totally have gelatin in them. I forgot to check and am so bummed that I didn’t think to check until my daughter had eaten almost one whole container. Ugh.
So, even though we had all this fancy new food in our fancy clean fridge, I didn’t make anything fancy for dinner last night. Here’s a pic of what we had:
I made Wildwood Tofu Veggie Burgers with corn (from my CSA) topped with chipotle cream and roasted potatoes and sweet potatoes. The corn with chipotle cream is DEEEEEEElicious! So easy to make, too! The tofu burgers were just okay; not nearly as yummy as Sunshine Burgers.
So, those are all the food-related highlights from my weekend. I hope everyone had a great weekend with beautiful weather and tasty food!

Oh, how exciting! Your fridge looks so nice and orderly. I’m a little jealous…not that I want to lose power, but it’d be nice to clean out my fridge before buying groceries again. It probably won’t happen b/c I LOVE food shopping…and I’m a hoarder. But a girl can dream…

wahooooooooooooooo for power! and dayyuuuum, Jennifer – your fridge is super neat and very well organized. i love it! it’s making me want to go home and organize mine & clean it, too!
that stinks on the gelatin in munchkin’s yogurt! argh! i hate when stuff like that happens. actually, a few week ago i was getting sunflower seeds and i turned a package over to check ‘em “just in case” and they totally had gelatin in them! what the heck?! gelatin in sunflower seeds?! gelatin in yogurt?! what’s go’n on with the icky gelatin?!
i need some chipotle cream in my life. mmmmmmmmmmmm!

) Although I know it must have been horrible to have to throw away all that food when the power went out.

I’m jealous of your fridge. I wish mine were that clean and organized! I’m glad you’ve got your power back. The longest we’ve ever lost power was 2 days and that was HARD (and we didn’t have any kids then).

Yaaaaaay for electricity! I totally get your christmas like restocking of the fridge and freezer, I got to do that not long ago when we moved in. So fun! (as my toddler says). That is so lame about the gelatin! I had a similar (though not really vegan related) issue with cottonseed oil in some pumpkin seeds the other day. Lame. I just heard from a naturopath that cotton is one of the most heavily sprayed crops in the universe, and the oil probably retains most of that gunk. Grrr! So many freaking gross things to watch out for!
