Mmmmmmm….last night’s dinner was delicious (which was awesome considering Monday’s icky cabbage dish)! The battery was dead on our good camera, so I took this pic with our not-so-good one:
I spent Monday night prepping all of the components so that I could put them all together as easily as possible last night. These are sort of calzone-y, but since I didn’t gauge my dough – filling ratio very well, they didn’t look very calzone-y. Instead, I’m just calling them hot pockets.
I used the same dough recipe from the Pups in Blankets recipe in Vegan Lunch Box. I doubled it, though, so there would be more dough available to make the hot pockets. I then made a simple and pretty standard basil pesto, but I added in some arugula just for fun. I chopped up some tofurky sausages and two plum tomatoes and sauteed them until the sausages browned.
To assemble the pockets, I cut out a square of dough, placed some pesto down first, then some leftover cheezy sauce went on next. I then piled on the sausages and tomatoes and then put some more arugula leaves on top. I baked them at 375 for 15 minutes. Perfect!
I served these with some marinara on the side for dipping. Mmm mmm good! My husband REALLY liked these, too. I brought the only leftovers for lunch today and I’m counting the minutes until it’s time to eat. I usually eat between 11AM and 11:30AM (I’m just so hungry by then!), but I have a meeting during that time today, so I won’t get to eat until after 12:30PM. I hope I can make it! Seriously, who calls a meeting during lunch? Or do I just eat earlier than everyone else?

I would be aggro to have a lunch break taken over by some meeting. I eat lunch far earlier than most people too. what do they have for breakfast that lasts them for so many hours anyway? no matter what I eat, it never lasts for long. or maybe they just eat all morning long.
either way, it’s not you, it’s them. ha!

Those look so good. I kinda miss Hot Pockets!
I get hungry around 11 too, but since I go to the gym after work, I make myself wait until 12 or 12:30 so lunch lasts me until afternoon/pre-gym snack time (4:30-ish). When the 11 a.m. munchies strike, I eat nuts or roasted edammame that I keep on my desk (or sometimes I’ll bring fruit for a mid-morning snack).
But I get so pissed when I have to go to a noon meeting. People who call noon meetings are stupid and I hate them. Lunch time is sacred, you know. It’s break time…relax time, not work time. Grrr!

there was a sammie place in chicago called flat sammies. it was in one of the only places that survived the chicago fire (the water tower). i always wondered how they got such a prime location, but looking at your sammie i now know why. thanks for sharing.

Mmm, homemade hot pockets. They sound awesome. Meetings during lunchtime is useless, people are thinking more about mealtime than the actual meeting. Ugh.
Thanks for the kind words about my grandfather. And as for a clean house, with Adam on the way and two boys leaving a path of destruction soon, there will be a sea of toys for the next 5 years or so. Ha ha. Hope you have a terrific day.

homemade hotpocket?! awesome – I don’t care if its a “failed” calzone, it looks truly awesome & I’m going to have to attempt this soon— so inspiring… maybe it can be another way I can slip kale in without my hubby noticing!!

I’ve never had stuffed peppers either. I guess I have never made them ‘coz I’d be the only one eating them in the family! I’ll have to make some on a day I’m on my own!
