My friend sent me the link to this recipe and it looked quick and easy enough that I thought I’d give it a try. It turned out to be as quick and easy as I thought and it was deemed “one of the best dinners ever” by my husband (although very sweet, I take his comments with a grain of salt since he also ranks Morningstar Vegan Burgers and tater tots as “one of the best dinners ever”).

However, I do think this dinner was a success because it met two very, very important criteria: 1) it’s fast and 2) it tastes good. I will definitely make the salad again, especially as things heat up this summer, because it is served cold. The best thing about the dinner, though, was that my daughter could not get enough of the soba noodles. She was eating them without the sauce and I’m not sure they actually tasted that great to her, but I think she ate so many just because they were fun and noodly.

wow! that looks soooo good! i love soba noodles! and a cold salad that’s fast + delicious sounds perfect to me, too! i’m gonna give this one a shot sometime soon! mmmmmmmmmm!
