For those nights when you need something good, but that’s fast and easy to make, try the Seitan Gyro recipe from Vegan Express (does anyone else love this book as much as I do?). Below is a picture of the final product (my husband bought a new (used) camera last week, so the pictures on my site are getting much better!) and the dressing recipe I adapted (Creamy Cucumber Dill Sauce) from the Garden of Vegan.

Cucumber Dill Sauce

1 1/2 medium cucumbers, peeled, seeded and chopped (big chunks are fine, they’re going right into a food processor)
1/4 cup silken tofu
2 T tahini
2 t garlic
2 t dry dill
(or to taste – 1 teaspoon wasn’t enough, but 2 seemed to do the trick)
salt and pepper to taste

Put all of the ingredients into a food processor and blend until as creamy as can be.

When dressing my gyro, I was at first conservative with the amount of sauce I put on. Then I tasted it and I put on more, and more, and more.

This was the best quick and easy meal I’ve made in a long time. It was a perfect end to the long holiday weekend.
