I spend a good deal of time in the kitchen and try my best to make healthy, flavorful, exciting, and satisfying meals for my family. My husband usually enjoys the food I make, but he doesn’t often rave about it. Last night, though, I had to take my daughter to the doctor and got home later than when I typically start making dinner. Because of this, I put some Morningstar Farms Vegan Burgers in the toaster oven and made some mac and “cheese”. Don’t you know – my husband was ecstatic! He must have told me two or three times how great that dinner was. Makes me stop and wonder why I try so hard!
(He got home late the night before, so all I did was heat up some tater tots to go with his sandwich. You would’ve thought I’d cooked him a three course meal!)

I guess we should never underestimate the power of mac and “cheese”! I haven’t even made it yet since going vegan. One of these days….

Men are just kind of simple like that. My boyfriend NEVER eats anything I make (he’s not vegan)…unless it’s plain old spaghetti with homemade tomato sauce. That’s all he really likes (besides steak, but that’s nasty and I’ll never cook that for him).
